Whole Wheat Blueberry Coconut Oat Pancakes

I LOVE pancakes, like a lot.  So I'm always trying to perfect my recipe and try new combinations.  I concocted this one yesterday, and it was a winner, so I thought I'd share it with you!

Here you go!

Whole Wheat Blueberry Coconut Oat Pancakes
(Is that a long enough name for you, because I can add a few ingredients if you'd like.)  ;)
2 cups Whole Wheat Flour
1 tsp Baking Soda
1 tsp Baking Powder
1/2 tsp Salt
1/2 cup Unsweetened Coconut Flakes (or shredded)
1 cup Rolled Oats
2 Eggs
2 cups Skim Milk or Flax Milk or whatever
1 cup Unsweetened Frozen Blueberries (or fresh)
(Pecans or walnuts would be really good, too, but I didn't want to up the calorie count.)

1.  Mix all of the dry ingredients.
2.  Add the eggs and milk and mix.
3.  Add the blueberries and stir until combined.
4.  Use about 1/2 cup of batter per pancake on a hot griddle and cook away.  I had two griddles going at once like a pancake-making rockstar mom.  I'm that awesome.

This makes 12 pancakes at 150 calories each.  Top with what you like.  Maple syrup is my favorite, but my goodness it's high in calories (210 for a quarter cup)!  So I like to top with plain, low-fat yogurt and bananas or blueberries (when I'm dieting).  When I'm not, then I top with the good ol' maple syrup, pecans or walnuts, more coconut, granola, whatever.
